Is bread good or bad for you? Neither. Or to be more precise – it depends on which bread you would be eating, the quantity of it and what you eat with it.
My main advice is to stay away from white bread! Or any other refined grains for that matter. White bread has little to no nutritional value. In making the grains ‘white’, all of the fiber and approximately 25% of the protein is removed. This leaves starch. A definite no-no especially for those concerned about weight loss.
Due to the fact that white bread is low in fiber and protein, it is quickly absorbed by your body. This leads to a spike in your blood-sugar levels followed by a crash, which leads to irritability and you looking for that quick fix from the vending machine.
White bread is full of refined carbohydrates which leaves a large amount of sugar in your bloodstream which, unless immediately used up in activity, will be stored as fat in your body.
Consuming white bread can negatively affect your mood. Eating refined carbohydrates (read – white bread), causes the blood-sugar levels to drop. Therefore if you love bread, you know what I say: ‘It’s all in moderation’! Have bread, but eat good quality and watch your portions 😉
So why not make your own bread? Making your own bread is not difficult. This can be a fun, simple and healthy alternative to the bread bought in a store. And the main benefit that will know exactly what you are eating.
My homemade bread got pretty popular I have to say 😉 And for that reason, I decided it’s time for it to go out there to the world 🙂 It is for my own convenience to be fair 🙂 It’s easier to post it in my blog than keep sharing the recipe on individual requests… So here it goes – the recipe of the Five Seed Homemade Spelt Bread by Agne!
2 tsp dried instant yeast or 20g. fresh yeats
30g. extra virgin olive oil
500g. spelt flour*
1 tsp salt
50 rolled oats
30g. sesame seeds
30g. sunflower seeds
30g. pumpkin seeds
30g. poppy seeds**
* You can substitute spelt flour to regular bread flour or half bread flour and half wholemeal.
** It is not essential to have all the seeds, simply add 150g. total of any seeds you have. Chia seeds work perfectly too.
- In a large bowl, dissolve yeast in 400g. of warm water.
- Add the honey, salt, oil, and the flour.
- Then add all the seeds, oats and mix it all together with a spatula or wooden spoon.
- The dough will be wet and sticky consistency.
- Prepare the loaf tins. Grease the loaf tins and place the baking paper (much easier to remove the bread from the tin).
- Transfer dough into the prepared loaf tin, sprinkle with extra seeds if you wish.
- Let the dough rise uncovered in a warm place until doubled in size (approx 1 hour).
- Pre-heat the oven to 200C and bake the loaf for 40 – 45 minutes. You will know it’s done when the top is nicely brown. Allow it to cool in the tin for 5 minutes.
- Transfer on a rack to cool for a few more minutes before slicing.
- Store any leftover bread in the air-tight container so it would stay soft and fresh for longer.

How easy is that? Honestly, couldn’t be more simple 😉 The only disadvantage – once you will bake the bread, you won’t be able to stop 😉
